ONA as The First Vegan
Restaurant With a
Michelin-Starred Title

Writing your name in history is really something special, especially when it comes to writing among the best culin
ary artists in the world. This entry was taken care of by the talented chef Claire Vallée with her restaurant ONA, which means Origine Non-Animale or Non-Animal Origin. It is the first restaurant since 1900 to boast the title of Michelin star, as the first vegan-free facility on its gourmet menu. This unique restaurant is located in the small picturesque village of Arès, near Bordeaux. Vallée told AFP when she was called by a Michelin guide who informed her of her decision: "I felt as if I had been hit by a train.

The team I work with is really proud. The Michelin star and the green star serve as recognition. It's also for them and the local producers and growers we work with, "the chef offered seven dishes on her gourmet menu using her favorite combinations of pine, mushroom, and sake or celery, tonka, and amber beer for $ 72. Specialties include yellow zucchini ravioli with black truffle dumplings and Swiss chard ballotine with vegetable ricotta. She was also awarded the Green Star, which Michelin began honoring last year for outstanding ethical practices, and she is among the 54 restaurants to receive her first star in the 2021 update. During the covid-19 pandemic, the restaurant only operated with itself.
